Low-Cal Tasty Tofu Custard Dessert

The holiday season is officially upon us. It’s commonly known as the most wonderful time of the year, but for dieters it can be the scariest time of year. How do you stick to your diet when there are visions of sugar plums and Christmas cookies dancing through your head? If you are in need of an indulgent dessert this season that won’t make you feel guilty, give this low-cal, rich and tasty tofu custard dessert a try.

3 large eggs
1 C. firm tofu
2 T. Spenda measure
1 c. milk
1 tsp. vanilla
1/2 tsp. cinnamon

Preheat the oven to 350 degrees. Spray 1 1/2 -quart casserole dish with non-stick cooking spray.

Beat the eggs in a medium-sized bowl. In a blender or food processor, process the tofu, sweetener, milk, vanilla, and cinnamon together until they’re smooth.

Pour the blended mixture into the bowl with the beaten eggs and stir, mixing well. Pour the custard mixture into the sprayed casserole dish.

Bake for 1 hour, until the top is light brown, or when a knife is inserted in the middle, it comes out clean. Let cool and serve at room temperature.
